Muffin recipes? Muffin recipes? -- Posted by lucy on 05-11-04 10:47
Hi everyone,
My husband just found out on a recent trip to the VA hospital that he's
borderline diabetic. I know almost nothing about the disease.. his doctor
told him to cut out sugar, which he's doing with great difficulty.
Just found this newsgroup and am so glad..
Does anyone have any tips for dealing with sugar cravings? Also, I used to
make muffins for him to eat for breakfast, and was wondering if that is too
much starch, or if anyone had any recipes for breakfast muffins (banana,
bran, etc), made without a sugar substitute at all (maybe applesauce or
something?), as the sweetners give both of us severe headaches.
Big request I know, I'd appreciate any help/tips/recipes.
Thanks,
lucille

Lucy,
Diabetics have to watch their sugar intake and their starch intake because
when starch is digested it forms sugars in the blood. Sugars and starches
are carbohydrates!!! A fad diet like the Atkins Diet is not the way to go,
but it is essential for diabetics (or borderline/pre-diabetics) to watch
their carbs. So you see that the suggestion to go to
alt.support.diet-low-carb was probably a good idea. That should be a place
for you to get lots of low carb recipes. I'm sure Bobby was not drunk. And
even though you didn't think you said anything about low carb, you really
did. I hope you find a great muffin recipe. Sorry, I don't have one.Good
luck with your new recipes.

I have been on Atkins for over a year. I'm sorry but it is not a fad
diet. It may not work for everyone but it has worked for me. I do
agree, however, that all diabetics need to watch their carbs to certain
criteria that is right for their bodies.

Lucille
Have your doctor set up a consult with a dibetic nutritionist they will
point you in the right direction. Have you tried a Google search for low
carb recipes?
