my doctor told me that insulin can store fat making it harder to lose
weight, does anyone know if this is true? i just have never heard anything
like that before..

It's an oversimplification, but in a snese, yes. For example:
Suppose you have just eaten a Thanksgiving dinner or about 4000
calories. When all that food is digested, a substantial amount of
glucose enters the bloodstream. In non-diabetics, this will trigger
the pnacreas to increase the insulin level. The rising insulin level
will signal muscle tissue to take up any glucose that it needs, and
since you still have extra glucose, it has to go somewhere. The liver
will respond to the situation by extracting glucose from the blood and
storing in as glycogen. Once the liver is storing all the glycogen it
can hold, it comverts any excess glucose to fatty acids, attaches them
to cholesterol, and ships the fats off to fat cells for long-term
storage. Thus the blood glucosse level remains fairly constant.
All of these reactions I have described are reversible, although some
may take longer than others, and some are more efficient that others.
The bottom line is that if you don't want to get fat(ter) don't eat
too much. (ever).
You can find much more detail and clarification on this process at
any library. To those who have studied the subject, I apologise for
trying to simplify this into a short post.
