Healthy Meals: On The Go

A few weeks ago, a very proud client of mine led me to her car after her
cooking lesson. The inside of the car resembled nothing short of a kitchen
on wheels. I had been working with her to come up with a solution so she
could eat nutritiously while still attending to her very busy real estate
career. Working odd hours, sitting in long traffic jams, and attending long
meetings were just a few of the common predicaments she found herself in.
So, rather than settling for eating fast food on the run, we turned her car
into a mini "foodmobile."

I'm the first to argue the importance of sitting down at a table and
enjoying a meal with family and friends. But despite the most well laid
plans, it can't always happen. Portable, healthful food may be the next best
thing to dining at your own kitchen table.

Don't rely on vending machines, convenience stores, fast food, or snack
bars. Think about how your work day is shaping up and determine whether it
is a good strategy to fill your car with sustenance. You can pack everything
from a lunch to be eaten at your next destination to a bunch of healthy
snacks to keep you going until your next meal.

It might be tempting to munch on snacks when you?re bored and sitting in
traffic. Be sure to space your meals and snacks throughout the day to keep
your blood sugars in control. And, as always, keep your meter with you and
use it whenever appropriate.

Here are some useful tips to get you started on your own mini foodmobile.

a.. Think insulation. Insulated coolers and vacuum bottles do wonders. You
should use a freezer gel pack in insulated coolers to ensure that food will
stay at 40°F or below. Food kept above that temperature should be eaten
within two hours.
b.. Fill zippered bags with raw vegetables. Bell peppers, carrot sticks,
cauliflower and broccoli florets, and snow peas are good choices. I'm not
recommending that you eat while driving, but when you stop for a break,
these veggies will be right at your fingertips when the hunger pangs start.
c.. Slice an apple and sprinkle with lemon juice. Bananas are relatively
mess free. A small bunch of seedless grapes is another good idea. Small
boxes of raisins (the Halloween size) are fuss free.
d.. Tote along a single portion of boxed or canned foods. Low-sodium
vegetable juice, individual packages of fat-free milk, and low-sodium
cup-a-soups come in handy. You can always fill a thermos with canned or
homemade soup.
e.. Stock up on other non-perishables. Small boxes of ready-to-eat cereal,
dried fruits, whole-grain crackers, and vacuum-packed tuna make great
tote-alongs.
f.. If you're using an insulated cooler, be sure to get the most out of
it. Fill it up with sandwiches, low-fat yogurt, individually packed cottage
cheese, small cubes or slices of low-fat cheese, hard-boiled eggs, or
individual slices of lean chicken, turkey, ham, or roast beef (just roll up
and eat).
g.. Don't forget the water! I have at least five or six bottles of water
in my car at any given time. Keeping yourself hydrated with fresh, pure
water will also help you fight fatigue while on the road! Put a straw in the
water bottle to make it easier to sip on the road.
